This Fava Bean Mansaf is a modern twist on the traditional Middle Eastern dish. It combines the rich flavors of the classic Mansaf with the nutritional benefits of fava beans. Topped with toasted nuts for extra protein and crunch, this dish is both satisfying and nutritious.
Main Ingredients
- 2 cupsbasmati rice
- 1 lbground lamb or beef
- 2 cupscooked fava beans (fresh or frozen)
- 1large onion(finely chopped)
- 3garlic cloves(minced)
- 2carrots(diced)
- 4 cupschicken or vegetable broth
- 2 tbspolive oil
- 1 tbspbutter
Spice Mix
- 2 tspground cumin
- 1 tspground coriander
- 1 tspturmeric
- 0.5 tspcinnamon
- 0.25 tspground cardamom
- 0.25 tspground cloves
- to tastesalt and pepper
For Garnish
- 0.5 cuptoasted cashews
- 0.25 cuppine nuts
- 2 tbspfresh parsley(chopped)
Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear.

In a large pot, heat 1 tablespoon of olive oil and 1 tablespoon of butter.

Add half of the chopped onion and sauté until translucent.

Add the rice and stir to coat with oil and butter.

Add 3 cups of broth, 1/2 teaspoon of turmeric, salt, and pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
Prepare the Meat and Fava Bean Mixture

In a large skillet, heat the remaining olive oil over medium heat.
